The “Fait Maison” label recognises restaurants that prepare all or most of their food in their own kitchens. It promotes the savoir-faire of Swiss gastronomy and fulfils consumers’ desire for transparency. It fights against the standardisation of taste and promotes regionality and seasonality. Dishes that do not fulfil the “Fait Maison” criteria are marked with an asterisk (*).
